Iron oxide is an affordable and biocompatible material exhibiting considerable electrochemical activity. Herein, Au nanoparticles were added at a minimum concentration to the iron oxide matrix to enhance the conductivity and catalytic properties. Electrochemical studies demonstrated that the Au@Fe2O3-modified SPE sensor exhibited excellent sensitivity, a low limit of detection(10.3 nM), and a wide linear detection range (0.16–500 μM), enabling effective PG detection even in the presence of interfering compounds. It performed well in real sample tests conducted using different commercial food samples, demonstrating high recovery rates and low relative standard deviations. Through density functional theory studies, the highest occupied molecular orbital and lowest unoccupied molecular orbital of PG were analyzed, and electron affinity was determined as 1.89 eV to understand the redox-active site.
